This is really not a cleaver, it is a slicer. This is a caidao slicer, in which there are two wider knives that do chopping and cleaving. As this is a high carbon knife, it is much sharper at the expense that it requires more maintenance. This cuts paper out of the box. The weight and rests are much different from a Western knife, so it will take some time to get used to. This is not meant for the rocking motion that you would get with a chef's knife, it is more of a lift and drop style. You must hand clean this, putting this in a dishwasher given the knife's metal composition will almost certainly rust it. This knife is best for precision slicing of vegetables and meats, and it will keep its edge for quite a while, but you still need to make sure that you keep the knife well-maintained for it to take care of your cutting jobs.
This thing has a good, solid weight. The upper part has a really attractive black hammered texture. The quality is obvious from the handle to the blade to the design on the leather sheath. It is the sharpest knife I’ve ever handled in my life. My husband was trying to slide it back into the sheath and he didn’t realize that the button strap was bent in a bit. The knife slice a strip about an inch long before he even realized he was accidentally cutting the leather. He was showing his friends the knife because he was really excited about it and they just kept talking about how sharp it is so it made me curious. I very very carefully touched the blade and it was kind of terrifying. Please cut on something thick that you won’t slice through. With my standard kitchen knives, I often cut something quickly on the bare countertop. I would never ever do that with this knife. I am in love and kind of scared at the same time.
I bought this because I thought it would be a crudely made chunk of thick steel that I could use to chop things with. It is, but it's also razor-sharp, scary, and dangerous.
I keep it above the door frame in my cabin for when I have to go out at night in bear country, and I take it down for cooking when I need something beastly, or super sharp.
This is a heavy knife. I thought it would be awkward to use, but it is awesome. It easily glides through what you are cutting. It can slice garlic paper-thin. The handle is easy to hold, the blade is made very well. I got this knife from watching a video on FB. It looks so badass. The one that the chef used was well over $100, this one is well priced and worth it. It replaces most of my knives I own. The leather cover is a must!! This knife is SHARP!!
This knife has proven itself in multiple prepping applications. It cuts through hard produce and yet is capable of a delicate cut. I used it with incredible precision in cutting thin slivers when making marmalade and later used it to smash garlic for a ferment. It holds its sharp edge and when needed takes to a quick sharpening with no problems. It also feels good in the hand, in fact the heft and balance just work magic. I'd buy this again and it will be a gift for my favorite people.
This knife is a heavy cleaver that comes very sharp out of the box and cuts like crazy! The heft of the knife can be a bit tiresome but the handle is very comfortable so the tradeoff is worth it. It cuts through potatoes, carrots, and everything else with ease. The sheath it comes with is mediocre but honestly, I wouldn't want to wear it on my belt because as I said, it is hefty! I absolutely love this knife and thought seriously about getting one for each of my brothers for Christmas but it comes factory direct so darn sharp I'm a little concerned about them hurting themselves! YES, it really comes that sharp! The only negative comment I have is, the blade needs TLC. After each use it must be washed then lightly coated with cooking oil so it will not rust. BUY ONE, you will NOT be disappointed!
Since starting to watch Liziqi on YouTube and appreciating her take on traditional Chinese cooking, I wanted a butcher knife similar to what she uses, this knife met that criteria. When it arrived the first thing I noticed is that it's heavy, it's definitely sharp, and the price was right. The leather holder for it smelled kind of funny so I put it outside for a couple of days and now it's fine. No complaints at all.
